Full Time Sushi Chef De Partie – Chotto Matte Soho

Up to £16 an hour inclusive of tronc

Chotto Matte is a globally recognized Japanese-Peruvian fusion restaurant group with locations in London, Manchester, San Francisco, Riyadh, Doha and Toronto. Our venues are immersive spaces where vibrant cuisine meets energetic beats, offering guests a unique and engaging dining experience.

We are looking for a talent Sushi Chef De Partie to join our fantastic team in our flagship restaurant – Soho in the heart of London.

About the role:

As a Sushi CDP, you’ll be an strong part of the kitchen team, supporting the delivery of world-class sushi to our guests. You’ll work closely with senior chefs to maintain exceptional standards, uphold consistency, and ensure every plate reflects the artistry of Chotto Matte’s cuisine.

Key Responsibilities

  • Prepare, plate, and present sushi dishes to Chotto Matte standards
  • Uphold food safety, hygiene, and allergen procedures at all times
  • Work collaboratively with the Sushi Head Chef and wider kitchen team
  • Maintain section mise en place, stock control, and cleanliness
  • Support smooth service during high-volume operations
  • Contribute ideas for innovation while respecting brand standards
  • Train and support junior chefs within your section
  • Demonstrate precision knife skills and expert handling of raw fish

Requirements

  • Previous experience as a Sushi Chef or CDP in a premium or high-volume restaurant
  • Exceptional knife skills and a deep understanding of sushi preparation techniques
  • Strong knowledge of Japanese ingredients, sushi rice preparation, and raw fish handling
  • Ability to thrive under pressure in a fast-paced environment
  • Passion for hospitality and delivering memorable guest experiences
  • Reliable, team-oriented, and eager to learn and grow

Pay: Up to £16.00 per hour
