We are launching a new high-volume sushi restaurant in Tooting Market, built around an all-you-can-eat concept with a modern Brazilian twist.

Our focus is on quality, consistency, and speed, combining traditional sushi with creative fusion items such as hot rolls and signature specials.

The Role:

We are looking for an experienced and reliable Head Sushi Chef to lead the sushi section and help build a strong kitchen from day one.

This role suits someone confident in a fast-paced, high-volume environment, with strong technical skills and a professional approach.

Key Responsibilities:

  • Prepare sushi to a high standard (uramaki, nigiri, sashimi)
  • Manage daily prep and ensure smooth service
  • Maintain consistency and speed during busy periods
  • Support menu development (fusion & hot items)
  • Oversee stock control and reduce waste
  • Ensure full hygiene and food safety compliance

Requirements:

  • Proven experience as a sushi chef in a busy kitchen
  • Strong knife skills and attention to detail
  • Ability to perform under pressure
