Duty Manager | The Scottish Cafe & Restaurant

Base Salary of £30,900 OTE of £35,000 inclusive of Tronc Tips

We are seeking a confident, professional, and highly knowledgeable Duty Manager to join the leadership team at The Scottish Cafe & Restaurant.

We are looking for a confident leader who embodies our "Magnificent 7" principles: to be happy, attentive, efficient, charming, knowledgeable, consistent, and confident in every task.

The Role

As Duty Manager, you will oversee the daily operations of the restaurant, ensuring a smooth, profitable, and compliant environment while maintaining the highest levels of customer satisfaction. You will work at the heart of the venue, bridging the gap between our Front of House and Kitchen teams.

Key Responsibilities Include:

  • The Guest Experience: Providing "The Victor Welcome" and "The Carlo Cuddle" to ensure every guest receives a perfect experience from arrival to departure.
  • Operational Excellence: Managing daily reservations, overseeing venue setup/close-down, and ensuring all hygiene and health and safety standards are meticulously met.
  • Team Leadership: Conducting pre-service briefings, managing staff breaks and labour costs, and providing regular feedback and coaching through 1-2-1s.
  • Financial Oversight: Driving revenue through strategic upselling, managing till operations, and ensuring all "Food, Wet, and Wage" costs remain within budget.
  • Professional Development: Coordinating supplier training and hosting "bitesize" workshops to support the ongoing growth of the team.

Requirements:

  • Hands on Leader- comfortable stepping into any role from Bartender to Welcome Host as circumstances dictate
  • Restaurant service experience required, preferrable in a Brasserie to Fine Dining venue.
  • Knowledge of wine and whisky an advantage
  • Proven experience in a hospitality management or supervisory role.
  • A deep understanding of menu ingredients, artisan suppliers, and premium service standards.
  • Strong administrative skills, including the ability to manage EOD reports, cash handling, and premise licensing regulations.
  • A positive, "can-do" attitude with the ability to remain calm and efficient during high-pressure services.
  • Personal License is a nice to have but not essential.

Position Details

  • Location: Scottish National Gallery, The Mound, Edinburgh EH2 2EL
  • Structure: 44 hours per week, worked over 4 days.
  • Remuneration: £30,900 per annum + Generous Tronc payments.
