Job Overview

We are seeking an experienced and dynamic Bar Manager with expert-level mixology skills to lead the operations of our vibrant night cocktail bar. The ideal candidate will bring a deep knowledge of spirits, cocktail creation, and guest experience, combined with strong leadership capabilities and hospitality management. You will be responsible for setting the tone behind the bar — crafting innovative cocktails, mentoring the team, and ensuring high standards of service and compliance across the board.

Key Responsibilities / Bar Management

  • Supervise and manage bar staff, ensuring excellent and consistent customer service.
  • Maintain inventory, monitor stock levels, and manage ordering processes to minimise waste.
  • Ensure compliance with all licensing laws, health & safety, and food hygiene standards.
  • Lead team briefings and schedule staff to meet business demands.
  • Handle customer queries and resolve complaints efficiently and professionally.
  • Monitor bar performance, margins, and profitability with a keen eye for driving sales.

Mixology & Beverage Innovation

  • Develop and execute seasonal cocktail menus that reflect current trends and align with the brand identity.
  • Oversee and ensure consistent preparation and presentation of all drinks.
  • Maintain a comprehensive knowledge of spirits, wine, beer, and non-alcoholic options.
  • Introduce and implement advanced bartending techniques (e.g., fat washing, clarification, smoke infusion).
  • Ensure bar is prepped to a high standard (house syrups, infusions, garnishes, etc.).
  • Host internal tastings and workshops to educate and elevate team knowledge and skill sets.

Leadership & Team Development

  • Train, mentor, and inspire a high-performing bar team.
  • Support hiring and onboarding of new team members.
  • Foster a positive, collaborative, and inclusive team environment.
  • Encourage creativity and input from team members for menu development.

Required Skills & Experience

  • Proven experience as a Bar Manager or Head Bartender in a high-end cocktail or hospitality environment.
  • Advanced mixology knowledge including classic and contemporary cocktail techniques.
  • Familiarity with drink costing, menu engineering, and GP margin management.
  • Strong understanding of bar equipment, tools, and modern cocktail preparation methods.
  • Excellent leadership and team development skills.
  • Ability to multitask in a fast-paced, high-volume environment.
  • A passion for hospitality, creativity, and guest experience.
  • Personal license and/or health & safety certification (desirable but not essential).
