Every day I review menus, check the number of orders to the amount of food that is available, work with staff and detainees to ensure the best possible dishes are made and that they are consistent. I pay wages, complete rotas, receipt and deliveries and check to see if they have been processed correctly. I order stock on a weekly basis and dodaily and weekly kitchen checks, this includes reviewing training and inductions. I have learnt to be patient and not take things for granted, as people that I work with sometimes have difficulties in learning and also English isn't their first language. As a team we all work together, ensuring that all timings are correct, as this can disrupt the core day if it is not. This is often challenging and makes the team work well. The hardest part of the job is combining the small budget per person with the variety of meals that we have to offer, and the amount that are ordered per day, I order 1 week in advance and orders per person can be placed up to the day before. I love the job as it gives me so much variety in all that I do, from menu planning to assessing for NVQ's, planning special diets to the more demanding management skills.
