I wouldn’t have sacked the loyal staff that had worked day, night, Christmas and holidays alike - both sites would be better off closed.
Remain loyal to existing staff members, give some incentive for promotion/ wage increase as minimum wage tends to equate to minimum effort from those on the lower wage brackets. Incentive in the form of tips, especially card tips. Furlough staff during a pandemic, rather than referring them to seek Universal credit.
