Job Title: Gelato Novelty Products Manager

Reports To: Head of Production & Compliance
Location: Snowflake Gelato CPU, Iver, Buckinghamshire
Employment Type: Full time

Position Overview:

The Gelato Novelty Products Manager is responsible for producing and overseeing high-quality gelato stick products. This role combines traditional pastry and gelato expertise with modern production techniques, ensuring consistency, creativity, and excellence across all frozen products.

This position is suitable for a Pastry Junior Sous Chef/Sous Chef looking to step up into the gelato world.

Key Responsibilities:

  • Production Management:
  • Oversee daily production of gelato sticks, including base preparation, moulding, freezing, and coating.
  • Ensure proper temperature control, consistency, and uniformity during production.
  • Monitor portioning, appearance, and product quality to meet brand standards.
  • Quality & Safety:
  • Maintain high standards of hygiene, sanitation, and food safety (HACCP compliance).
  • Conduct quality checks on ingredients and final products.
  • Ensure traceability and accurate labelling of all batches.
  • Team & Operations:
  • Supervise and train production staff in gelato stick processes and techniques.
  • Manage raw material usage and inventory control to reduce waste and optimize costs.
  • Innovation & Improvement:
  • Collaborate with Head of Product Development and Innovation for management on new product lines and limited-edition flavours.
  • Continuously improve production methods for efficiency and scalability.

Qualifications & Skills:

  • Minimum 3–5 years of experience in gelato, ice cream, or pastry production.
  • Ability to operate gelato production equipment (mixers, pasteurizers, blast freezers, stick mold machines, enrobing/coating lines).
  • Excellent attention to detail and commitment to quality.
  • Strong leadership and teamwork skills.
  • Knowledge of HACCP and food safety regulations.

Physical Requirements:

  • Ability to work in low-temperature environments for extended periods.

Preferred Experience:

  • Background in industrial or semi-industrial gelato production.
  • Experience in chocolate coating, enrobing, or decorative finishing for frozen desserts.
  • Familiarity with product packaging and cold chain logistics.
