  • Standardize F&B policies, procedures, service sequences, and operational manuals across all properties.
  • Conduct regular audits of property-level F&B operations to ensure strict compliance with brand standards, health, safety, and hygiene regulations.
  • Collaborate with General Managers and property F&B teams to optimize layout, workflows, and service delivery.
  • Financial & Performance Management: Drive revenue growth, control food and labor costs, and implement strategic cost-containment measures without compromising quality.
  • Analyze monthly P&L statements, variances, and operational KPIs for each property's F&B department, implementing corrective actions where necessary.
  • Assist properties in annual budget forecasting, pricing strategies, and capital expenditure (CapEx) planning for F&B outlets.
  • Menu Engineering & Concept Development: Work closely with Corporate / Executive Chefs to develop, engineer, and refresh menus based on market trends, guest feedback, and profitability metrics.
  • Design and launch innovative culinary concepts, promotional calendars, and beverage programs to elevate the brand's competitive edge.
  • Procurement & Vendor Management: Establish corporate supply chain guidelines, negotiate contract terms with key vendors, and oversee centralized purchasing to leverage economies of scale.
  • Ensure strict inventory controls, wastage minimization, and supply quality consistency across properties.
  • Talent Development & Training: Define core competencies and training programs for F&B service and culinary teams.
  • Mentor, coach, and evaluate property F&B Managers, fostering a culture of high performance and continuous professional growth.

Skills

  • Proven experience in food production, cooking, serving, and food preparation within a hospitality or restaurant environment.
  • Strong management skills with previous supervising or leadership experience in a culinary setting.
  • Extensive knowledge of food safety standards and best practices in hygiene management.
  • Background in restaurant or kitchen operations with a focus on hospitality excellence.
  • Demonstrated ability to lead teams effectively while maintaining high standards of service delivery.
  • Excellent organisational skills with the ability to manage multiple tasks efficiently under pressure.
