ROLE OVERVIEW: You will help provide an environment that is warm and welcoming to all Mettricks customers and visitors whether that is through direct interaction or by creating a clean, vibrant, and safe environment for both staff and customers. We expect all our staff to be sincere and authentic individuals who can help promote Mettricks as the speciality coffee company in Southampton.
Your desire to serve and your ability to train your team to serve the perfect drink will drive you to push for high standards from your Barista team. You will be heavily involved with developing your Baristas, to impart knowledge and skill whilst reporting directly back to your store manager and company Head of Coffee. As a Mettricks Head Barista you will be responsible for management of the Bar but also an ambassador for Mettricks speciality coffee and look for ways to enhance that reputation.
HEAD BARISTA EXPECTATIONS
- Develop & train the Barista team to deliver perfect drink every time, train the FOH team on drink knowledge.
- Ensure brand drink standards are delivered at all times, milk texture, shots, steep times, latte art
- Maintain all equipment to ensure reliability and consistency. Calibrate in line with company spec and ensure shots are checked regularly.
- Ensure the barista team deliver the Mettricks hot drink service standards.
- Deliver Hot Drinks GP% and maintain stock levels to ensure availability
Responsibilities:
Day-to-day business operations
- Barista training and development in-house, recording through training checklists and conferring with GM/Head of Coffee on individuals’ progress
- Organise and control the working process on the bar so as to create the best possible customer experience and hit agreed wait times for drinks
- Liaise with Supervisors and GM regularly to ensure that standards and processes are followed consistently across the whole business
On the Bar
- Lead the team on the shop floor on a day-to-day basis and set and uphold the expectations on the barista team
- Ensure minimal wastage of all products by effective supervision and accurate recording of wastage on shift
- Maintain beverage quality (according to standards set by Head Barista/Head of Coffee)
- Maintain upkeep of bar equipment and organise regular cleaning and maintenance
- Ensure weekly and daily tasks are completed, including opening/closing procedures and checklists
- Ensure complete cleanliness and order on the shop floor
General
- Lead and inspire through your own actions, words and behaviour
- Act and present yourself professionally at all times, representing Mettricks values on the shop floor and to the coffee community at large
- Welcome and connect with every customer, creating a community and care factor ethic
- Evaluate systems and workflow suggesting improvements to the shop GM/Head of Coffee
- Follow health and safety guidelines and regulations at all times

The success of each shift relies on your ability to react to the flow of customers by organizing your bar and prioritizing work flow without compromising quality. This means monitoring queues and customer waits, constant communication with the till staff as well as providing professional and friendly coffee knowledge and resource to customers.
You will need the ability to stay calm and focused under pressure whilst being able to get the best out of your team and thrive on a busy atmosphere.
