Job Description
We are looking for an experienced and passionate Head Chef to lead our dynamic kitchen team. The ideal candidate will have a strong culinary background and a creative flair for designing an innovative menu that caters to both locals and visitors alike. As the Head Chef, you will oversee all kitchen operations, ensuring the highest standards of food safety, quality, and efficiency while managing a small but dedicated team of six.
You will work closely with the General Manager to recruit, train, and mentor your team, helping them grow and reach their full potential. Your leadership will drive the delivery of consistently exceptional food, exceeding guest expectations while also managing the financial health of the kitchen. This includes overseeing ordering, deliveries, stocktaking, and minimising waste to maintain profitability.
In addition to leading by example, you will ensure that the kitchen adheres to the highest standards of cleanliness and follows all Food Safety and Health Safety regulations, in line with both legal requirements and company policy.
As Head Chef, you’ll also have the opportunity to craft exciting seasonal menus featuring locally sourced ingredients, daily specials, and unique event menus that reflect your creativity and passion for food.
You’ll be living in the picturesque village of Grassington, featured in the critically acclaimed Channel 5 series “All Creatures Great and Small”. The Black Horse is a charming 17th-century coaching inn, with its inviting blend of rustic charm and modern comfort, our hotel offers 15 en-suite, pet-friendly rooms, a cozy 70-seat restaurant, and a welcoming pub, complete with a quaint outdoor area. When you step inside you'll find an atmosphere as quirky and unique as the Dales themselves—where uneven floors and walls add to the character of the space!
We take pride in offering a relaxed yet refined dining experience, serving fresh, locally sourced produce. While we embrace tradition, we’re always open to fresh ideas and innovation. Our menu features a delightful mix of à la carte and classic dishes, all crafted from scratch right here in-house. We cater to all dietary needs and can accommodate groups from 10 to 60 guests, we are perfect for special events and themed nights.
Key Responsibilities
- Constantly seeks to deliver a quality offer to ensure customer satisfaction. Seeks to instil a continuous improvement ethos in the kitchen team.
- Develop and design seasonal a la carte menus, incorporating fresh ingredients and current culinary trends.
- Supervise daily kitchen operations, ensuring full compliance with food safety regulations and hygiene standards. Assure all relevant paperwork and documentation comply with current legislations.
- Train, mentor, and manage kitchen staff to foster a positive working environment and enhance team performance. Ensure catering duties are performed efficiently with customer service and satisfaction being a key focus.
- Forecast and manage the kitchen rota.
- Collaborate with front-of-house staff to ensure seamless service and guest satisfaction.
- Monitor inventory levels, order supplies, and manage food costs effectively to maximise profitability.
- Implement standard operating procedures for kitchen operations to ensure efficiency and quality control.
- Ensure all kitchen procedures and systems are followed and company standards are met, particularly in relation to Health & Safety, Food Hygiene and routine cleaning. Effectively manage GP, food stocks and equipment maintenance.
- Approach all work responsibilities with a positive and proactive nature.
- Liaise with the General Manager and business owners about quality issues, stock levels, deficiencies, equipment checks/failures and any incidents that have occurred in the kitchen.
Essential Qualities
- Ability to prepare and deliver excellent food for the customer.
- Strong leadership skills with the ability to motivate and manage a team effectively while maintaining a relaxed friendly atmosphere is a must.
- In-depth knowledge of HACCP and EHO rules and regulations.
- Ability to work under pressure in a fast-paced environment while maintaining attention to detail.
- Motivated to achieve customer satisfaction.
- High standards of personal presentation and food/kitchen hygiene.
- Be an excellent role model and posses impeccable communication and leadership skills.
- Love your job - demonstrate a positive attitude all day, every day.
- Experience in managing and motivating a kitchen team.
- Ability to manage a kitchen team in an often-pressurised working environment.
- Ability to follow company procedures and deliver high standards.
- Problem solving skills.
- Demonstrate due diligence and encourage a safe working environment.
- Flexible and adaptable to perform any other duties as required.
- Ability to work a variety of shifts including weekends, days, afternoons and evenings.
