The Opportunity

We are seeking a skilled baker specializing in viennoiserie and laminated pastries to join our team. As a viennoiserie specialist baker, you will focus on crafting premium croissants, Danish pastries, and other laminated dough creations that pair harmoniously with our specialty coffees. You will collaborate closely with the pastry chef to develop innovative recipes and ensure every product meets the highest standards of quality and presentation.

Responsibilities

  • Expertly prepare a range of viennoiseries, laminated pastries, and other baked goods using traditional and innovative techniques.
  • Collaborate with the pastry chef to develop new recipes and menu items that highlight unique flavor pairings with our coffee offerings.
  • Monitor inventory levels of key baking ingredients, particularly those used for laminated and viennoiserie products, and notify the head chef of any shortages or issues.
  • Maintain precision in dough handling, proofing, and baking to ensure consistent, high-quality results.
  • Follow proper food handling and sanitation procedures to uphold the safety and quality of all baked goods.
  • Maintain a clean and organized work area, including all equipment and tools used in the baking process.
  • Work closely with the team to ensure timely preparation and delivery of products during service hours.
  • Adhere to established production schedules, prioritizing tasks efficiently to meet deadlines.
  • Share expertise and provide guidance to other bakers and kitchen staff to maintain a collaborative and high-performing team environment.

Requirements

  • High school diploma or equivalent.
  • 2+ years of professional baking experience, with a strong focus on viennoiserie and laminated dough.
  • Expertise in lamination techniques, proofing, and baking viennoiseries to perfection.
  • A passion for precision and craftsmanship in baking.
  • Strong attention to detail, organizational skills, and a commitment to excellence.
  • Excellent time management skills with the ability to multitask and prioritize in a fast-paced environment.
  • Flexibility to work early mornings, evenings, and weekends as needed.
