Junior Sous Chef – Pastry
Wandsworth Road / Battersea, London | £42,000 per annum
We're looking for a Junior Sous Chef (Pastry) to join a high-volume, high-quality pastry production unit. This is a dedicated production environment where consistency, speed and precision matter as much as flavour. You'll supervise the section while staying hands-on with pastry.
Shift pattern: Two rotating shifts, 5am–3pm or 9am–7pm (the role is mainly 9am–7pm)
The Role
- Supervise and take part in daily pastry and bakery production
- Deliver products to specification, volume and deadline, planning production schedules around demand
- Maintain high standards of mise en place and workflow, with consistency across every item and every batch
- Own product quality, presentation and taste; follow recipes accurately and support standardised production processes
- Check all products before dispatch
- Monitor food cost, yields and wastage; ensure FIFO stock rotation
- Assist with stock ordering, inventory control and reporting discrepancies; maintain accurate recipe documentation
- Support supervision of the production team; train and mentor junior chefs
- Keep a disciplined, organised section and lead by example
- Ensure HACCP and food safety compliance; maintain a clean, safe working environment and correct equipment use
- Follow all health & safety regulations
- Liaise between sites, coordinate with other departments, and escalate issues to senior management as needed
What We're Looking For
- Solid pastry/bakery production experience, ideally at junior sous level, in a high-volume setting (production or restaurant)
- Comfortable working to volume and deadline without cutting corners on quality
- Confident training and supervising junior team members
- Good working knowledge of HACCP and food safety standards
- Organised, calm under pressure, and a genuine team player
