At Twelve Triangles, we’re looking for an experienced Bakery Production Manager to lead the day-to-day operation of our central bakery.

This is a senior operational role responsible for delivering exceptional quality and consistency across everything we bake. You’ll lead a team of around 20 bakers working across day and night shifts, ensuring production runs efficiently while maintaining the standards that have defined Twelve Triangles since day one.

This role requires demonstrable experience working with naturally leavened sourdough bread and laminated pastry production. We’re looking for someone with a strong artisan bakery background who understands both the craft and the operational demands of producing at scale.

Working closely with our Founder, Operations Manager and wider senior management team, you’ll be responsible for driving quality, developing people, improving systems and ensuring the bakery is well positioned for future growth.

The role

You’ll take ownership of the bakery’s daily operation, balancing production, quality, staffing and continuous improvement.

Key responsibilities include:

• Leading and developing a team of around 20 bakers across day and night shifts.
• Maintaining exceptional quality and consistency across our sourdough breads, viennoiserie and wider bakery range.
• Planning and overseeing daily production to meet demand across multiple retail locations.
• Working closely with supervisors to ensure smooth, efficient production every day.
• Forecasting production levels to minimise waste while ensuring availability.
• Monitoring production data, identifying trends and making informed adjustments to improve efficiency and consistency.
• Managing labour, productivity and bakery efficiency.
• Identifying opportunities to improve systems, workflow and production processes.
• Supporting recruitment, training and development within the bakery team.
• Working collaboratively with Operations, Retail and Production Managers to ensure the wider business operates effectively.
• Maintaining the highest standards of food safety, hygiene and HACCP compliance.
• Supporting new product development while ensuring our core range remains consistent and exceptional.

About you

You’ll be an experienced bakery leader who enjoys building strong teams and creating systems that allow people to do their best work. You’ll likely have:

• Extensive hands-on experience producing naturally leavened sourdough bread in a commercial artisan bakery.
• Strong practical experience producing laminated pastry and viennoiserie to a consistently high standard.
• Experience managing an artisan bakery or scratch bakery production operation.
• Experience planning production for multiple retail sites or wholesale customers would be an advantage.
• A passion for maintaining exceptional quality and consistency.
• Strong leadership skills with experience managing multiple teams or shifts.
• Excellent organisational and planning ability.
• Confidence using production data to make commercial decisions.
• A calm, practical approach under pressure.
• A collaborative approach and excellent communication skills.
• A genuine interest in developing people and creating a positive bakery culture.

This role would suit an experienced Production Manager looking for a new challenge, or an ambitious Head Baker ready to step into a broader operational leadership position. We’re looking for someone who enjoys building teams, improving systems and taking ownership of a successful bakery operation.
