About Vermilion

Vermilion is one of Manchester’s most distinctive hospitality destinations, bringing together restaurant dining, cocktails, private dining, weddings and events in a unique luxury setting.

The Role

Vermilion is looking for a confident and commercially minded Reservations Manager to take ownership of our reservations department and help increase restaurant sales.

This is a hands-on role for someone who understands hospitality, guest service and, importantly, how to turn enquiries into confirmed bookings.

Key Responsibilities

  • Manage restaurant reservations across phone, email and online channels.
  • Convert enquiries into confirmed bookings.
  • Follow up guests who have enquired but not yet booked.
  • Maximise covers across lunch, dinner, weekends and quieter periods.
  • Upsell group dining, celebrations, Christmas, private dining and drinks packages.
  • Manage larger bookings, deposits and special requests.
  • Build relationships with regular guests and corporate clients.
  • Monitor booking levels and identify opportunities to increase sales.
  • Reduce cancellations and no-shows through effective communication.
  • Maintain accurate guest profiles and booking information.
  • Manage table allocations to maximise capacity and revenue.
  • Work closely with Restaurant, Events and Marketing teams.
  • Report on booking numbers, conversion rates, cancellations and trends.
  • Train the reservations team to provide excellent service with a strong sales focus.

What We’re Looking For

  • Previous restaurant, hotel or hospitality reservations experience.
  • Strong communication and telephone skills.
  • Confident selling, upselling and closing bookings.
  • Proactive and comfortable following up enquiries.
  • Highly organised with good attention to detail.
  • Experience with reservation or CRM systems.
  • SevenRooms experience is an advantage.
  • A good understanding of premium hospitality and guest expectations.

What Success Looks Like

You will help Vermilion:

  • Increase confirmed bookings.
  • Improve enquiry-to-booking conversion.
  • Fill quieter services.
  • Grow group and celebration bookings.
  • Increase repeat business.
  • Reduce lost enquiries and no-shows.
  • Increase guest spend through effective upselling.
  • Communication of guests information to relevant departments.
  • Investigate guest complaints and respond promptly and professionally, resolving concerns and maintaining customer confidence in Vermilion.
